Alison was Chef ( de cuisine ) on our yacht. She has been cooking for us for over a decade now and she was an outstanding chef and individual.

She was able to cook from fine French cuisine to Sushi, Thai or Mexican food, often with an Ali touch.

Personally, I will never forget her 'more than delicious' fresh pasta pommodoro, her salads with avocado and grilled pecan nuts and the flamboyant death by chocolate desserts !
Wherever we were, in the Caribbean , the USA or in Europe she made our meals a joy to finish the day.

We can strongly recommend any meal from her kitchen!

A SELECTION OF  COLD HORS D'OEUVRES:

• Chicken & three herb rice paper rolls served with a hoisin drizzle
• Potato & chive pancakes with a steamed prawn & lemon cream cheese
• Tuna tartare with lime, chilli & coriander served on cucumber rounds
• Rustic bruschetta with fresh mozzarella, tomato & basil
• Kumura rosti with Moroccan lamb & minted broad bean puree
• Paprika & gruyere tartlets filled with beetroot, goats cheese & chives
• Hot smoked salmon & lemon cream cheese sandwiches

MY FAVOURITE MAIN COURSES:

• Calamari & black pudding in a hoisin, ginger & chilli dressing
• Salmon parcels in filo with a coriander pesto
• Whole seared eye fillet of beef encrusted with herbs and served with smoky BBQ sauce
• Lemon & rosemary butterflied legs (or backstraps) of lamb served with an anchovy, caper & rosemary sauce
• Chicken breasts stuffed with porcini & local mushrooms, rolled & wrapped in pancetta
• Thai prawn, avocado & sesame salad
• Pork belly with a star anaise & soy jus

A SAMPLING OF HOT HORS D'OEUVRES:

• Mini Yorkshire puddings with roast eye fillet of beef, horseradish & rocket
• Duck, plum & Asian vegetable filo parcels served with a plum sauce drizzle
• Kaffir lime crab cakes with Thai red curry sauce
• Seared scallop on a kumura rosti with curried cauliflower puree
• Sweetcorn & parsley fritters served with a creamy sweet chilli dipping sauce
• Sesame seared tuna kebabs with a soy ginger dipping sauce
• Steamed chicken & lemongrass dumplings with a chilli mojo dipping sauce
• Lamb cutlet in rosemary puff pastry with parmesan & truffle.
• Homemade sausage rolls with a tomato chilli chutney
• Mini goats cheese & chargrilled pepper quiches

SALADS AND VEGETABLES:

• Roast baby potato salad with a balsamic & cumin glaze
• Rocket, kale, bean & avocado salad with a pomegranate dressing
• Rustic Mediterranean salad with crunchy garlic crutons
• Traditional ceasar salad with pulled chicken & bacon
•Broad bean, rocket, pinenut & mint salad
